Cornbread Garden Omlet

This hearty omelet will become your favorite recipe for breakfast or a simple supper.



  1. PREPARE frozen corn and spinach according to each package directions and drain.
  2. COOK sausage and frozen seasoning blend until sausage is browned and onions are translucent. Drain. Blend sausage mixture with corn mixture and stir.
  3. COMBINE muffin mix, milk and eggs in a bowl. Heat griddle and coat with cooking spray.
  4. POUR 1/4 cup muffin mix batter on griddle, cook until batter bubbles and gently flip. Place desired amount of vegetable mixture on one side of omelet and top with cheese.
  5. FOLD omelet in half and continue to cook until cheese begins to melt.
