Directions
- PREPARE frozen corn and spinach according to each package directions and drain.
- COOK sausage and frozen seasoning blend until sausage is browned and onions are translucent. Drain. Blend sausage mixture with corn mixture and stir.
- COMBINE muffin mix, milk and eggs in a bowl. Heat griddle and coat with cooking spray.
- POUR 1/4 cup muffin mix batter on griddle, cook until batter bubbles and gently flip. Place desired amount of vegetable mixture on one side of omelet and top with cheese.
- FOLD omelet in half and continue to cook until cheese begins to melt.

- 1 pound bulk pork sausage
- 1/2 cup frozen Pictsweet Farms Seasoning Blend
- 1 (8.5 oz.) package corn muffin mix
- 3/4 cup milk
- 2 eggs, beaten
- 1 cup cheddar cheese, shredded
