Sweet Potato Pancakes

Feed your family pancakes that are not only delicious but contain vitamins, fiber and antioxidents.



  1. PREPARE frozen sweet potatoes according to package directions. Allow to cool.
  2. BLEND all remaining ingredients in a medium bowl. Add sweet potatoes to the bowl and stir until well incorporated.
  3. PREHEAT lightly oiled griddle or skillet. Pour approximately 1/8 cup of batter on to the pan spacing evenly so the pancakes have room to spread.
  4. COOK until edges of pancakes are cooked and there are bubbles on top. When bottom is nicely browned, flip and cook for 1-2 additional minutes.
  5. REMOVE from pan and plate. Serve with butter, honey, syrup or confectioners sugar.
