Directions
- PREPARE frozen sweet potatoes according to package directions. Allow to cool.
- BLEND all remaining ingredients in a medium bowl. Add sweet potatoes to the bowl and stir until well incorporated.
- PREHEAT lightly oiled griddle or skillet. Pour approximately 1/8 cup of batter on to the pan spacing evenly so the pancakes have room to spread.
- COOK until edges of pancakes are cooked and there are bubbles on top. When bottom is nicely browned, flip and cook for 1-2 additional minutes.
- REMOVE from pan and plate. Serve with butter, honey, syrup or confectioners sugar.

- 2 eggs, large
- 1 tablespoon sugar
