Sweet Potato Onion Cups

These muffins are a great addition to a brunch buffet.



  1. PREHEAT oven to 350°F. Prepare frozen sweet potatoes in microwave according to package directions.
  2. MELT butter in a skillet and sauté frozen onions until translucent.
  3. PLACE potatoes, onions and remaining ingredients into a mixing bowl. Blend well.
  4. POUR mixture into greased muffin cups filling each 3/4 of the way to the top. Bake approximately 20-25 minutes and remove from oven. Allow muffins to cool 5-10 minutes and serve.
