Directions
- PREHEAT oven to 350°F. Prepare frozen sweet potatoes in microwave according to package directions.
- MELT butter in a skillet and sauté frozen onions until translucent.
- PLACE potatoes, onions and remaining ingredients into a mixing bowl. Blend well.
- POUR mixture into greased muffin cups filling each 3/4 of the way to the top. Bake approximately 20-25 minutes and remove from oven. Allow muffins to cool 5-10 minutes and serve.

- 1/2 cup frozen Pictsweet Farms Chopped Onions
- 3 slices bacon, cooked and crumbled
- 1 cup Parmesan cheese, shredded
- 1/2 cup half and half
- 3 large eggs, beaten
- 1/4 teaspoon salt
- 1/4teaspoon pepper
