Sweet Potato Muffins with Cream Cheese Filling

These muffins are good enough to serve for dessert!


  • Muffins
  • 2 cups frozen Pictsweet Farms Mashed Sweet Potatoes
  • 1 3/4 cups self rising flour
  • 1 cup sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 1 egg, beaten
  • 1/3 cup vegetable oil
  • Filling
  • 1 (8 oz.) package cream cheese, softened
  • 1/4 cup sugar


  1. PREHEAT oven to 350°F. Prepare sweet potatoes according to package directions.
  2. BLEND all muffin ingredients in a bowl until well blended. Mix filling ingredients in a small bowl until smooth.
  3. POUR muffin mixture into greased muffin pan filling each cup 1/4 of the way. Add 1 tablespoon of filling mixture and top with enough muffin mixture to fill 3/4 of the way to the top of the cups.
  4. BAKE for 20-25 minutes. Remove from oven and allow to cool for 5-8 minutes before removing from pan.
