Mixed Greens and Potato Soup

The addition of the greens adds a wonderful texture to the traditional potato soup.

Ingredients

  • 1 pound pork sausage
  • 1 cup frozen Pictsweet Farms Chopped Onions
  • 1 (32 oz.) container fat free chicken broth
  • 4 medium potatoes, peeled and cubed
  • 1 (14 oz.) package frozen Pictsweet Farms Mixed Greens
  • 1/4 teaspoon minced garlic
  • 1/4 teaspoon red pepper flakes
  • 1/2 cup half-and-half cream
  • salt to taste

Directions

  1. COOK sausage and frozen onions in a Dutch oven until sausage is browned and onions are translucent. Drain and return to pan.
  2. ADD broth, potatoes, frozen greens, garlic and red pepper flakes to the pan. Boil until potatoes and greens are tender.
  3. POUR whipping cream into the pan.
  4. HEAT on medium until soup thickens. Sprinkle with salt to taste.
