Directions
- PREHEAT oven to 375°F. Prepare frozen greens according to package directions and drain.
- MELT butter in a Dutch oven and sauté frozen onions until translucent. Stir in 1 1/2 cups milk, sugar, salt and pepper.
- WHISK in grits gradually and bring to a boil. Reduce heat to low and cook, stirring frequently, for about 5 minutes until thick and creamy.
- COMBINE eggs and 1/4 cup milk. Add greens, cheese, and egg mixture into grits.
- BAKE about 35 minutes, in lower third of the oven, until the quiche is set in the center.
Grits and Greens Quiche
If you have a 2-quart Dutch oven, you can make the entire recipe from sautéing to baking, in the same container.
