Grits and Greens Quiche

If you have a 2-quart Dutch oven, you can make the entire recipe from sautéing to baking, in the same container.

Ingredients

  • 1 (14 oz.) package frozen Pictsweet Farms Mixed Greens
  • 3 tablespoons butter
  • 1 cup frozen Pictsweet Farms Chopped Onions
  • 1 3/4 cup milk, divided
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 cup quick-cooking grits
  • 4 large eggs
  • 1 cup white cheddar cheese (mild or sharp), coarsely shredded

Directions

  1. PREHEAT oven to 375°F. Prepare frozen greens according to package directions and drain.
  2. MELT butter in a Dutch oven and sauté frozen onions until translucent. Stir in 1 1/2 cups milk, sugar, salt and pepper.
  3. WHISK in grits gradually and bring to a boil. Reduce heat to low and cook, stirring frequently, for about 5 minutes until thick and creamy.
  4. COMBINE eggs and 1/4 cup milk. Add greens, cheese, and egg mixture into grits.
  5. BAKE about 35 minutes, in lower third of the oven, until the quiche is set in the center.
