3 Pepper and Onion Bisque

This creamy soup will warm your soul on a cool day. It is also wonderful served with a club sandwich or as the first course of a special dinner.


  • 1 tablespoon butter
  • 1 (16 oz.) package frozen Pictsweet Farms 3 Color Pepper & Onion Strips
  • 1/2 teaspoon garlic, minced
  • 1 (14.5 oz.) can vegetable broth
  • 1/2 teaspoon dried thyme
  • 1/8 teaspoon cayenne pepper
  • 1 cup half and half
  • salt to taste


  1. MELT butter in a large saucepan. Sauté frozen pepper blend until onions become translucent. Add garlic and cook for 1 minute.
  2. ADD broth, thyme and cayenne pepper and bring to a boil for 3 minutes. Remove from heat and cool slightly.
  3. PURÉE in blender until smooth. Mix 1 cup of purée with half and half to temper and add back to food processor. Pulse to blend well.
  4. RETURN to saucepan and heat slowly until mixture begins to thicken.
