3 Pepper and Onion Bisque

This creamy soup will warm your soul on a cool day. It is as wonderful served with a club sandwich as it is for the first course of a special dinner.


  • 1 tablespoon butter
  • 1 (16 oz.) package frozen Pictsweet Farms 3 Color Pepper & Onion Strips
  • 2 teaspoons garlic, minced
  • 1 (14.5 oz.) can vegetable broth
  • 1/2 teaspoon dried thyme
  • 1/8 teaspoon cayenne pepper
  • 1 cup half and half
  • salt to taste


Melt butter in a medium sauce pan. Saute 3 pepper and onion blend until onions become translucent. Add garlic and cook for 1 minute. Add broth, thyme, and cayenne pepper and bring to a boil for 3 minutes. Reduce heat and simmer for 25 minutes..Remove from heat and cool slightly. Puree in food processor until smooth. Mix 1 cup of puree with half and half to temper and add back to food processor. Pulse to blend well. Return to sauce pan and heat slowly until mixture begins to thicken and desired temperature is reached. Do not boil.
