Directions
- PREHEAT oven to 350°F. Prepare sweet potatoes according to package directions.
- BLEND all muffin ingredients in a bowl until well blended. Mix filling ingredients in a small bowl until smooth.
- POUR muffin mixture into greased muffin pan filling each cup 1/4 of the way. Add 1 tablespoon of filling mixture and top with enough muffin mixture to fill 3/4 of the way to the top of the cups.
- BAKE for 20-25 minutes. Remove from oven and allow to cool for 5-8 minutes before removing from pan.

- 1 3/4 cups self rising flour
- 1 cup sugar
- 1/4 teaspoon salt
- 1/4 teaspoon cinnamon
- 1 egg, beaten
- 1/3 cup vegetable oil

- 1 (8 oz.) package cream cheese, softened
- 1/4 cup sugar
