Southwest Cornbread Casserole

The whole family will enjoy this recipe for dinner tonight.


  • 1 (12 oz.) package frozen Pictsweet Farms Mixed Vegetables
  • 1 (10 oz.) package cornbread stuffing mix
  • 1 1/2 cups ham, cubed
  • 2 cups milk
  • 3 eggs, beaten
  • salt and pepper to taste
  • 1/2 cup cheddar cheese, shredded


  1. PREHEAT oven to 375°F. Prepare frozen mixed vegetables according to package directions and drain.
  2. COMBINE vegetables, stuffing mix and ham. Pour into a greased casserole dish.
  3. MIX milk, eggs, salt and pepper in a bowl. Pour over vegetable mixture and top with cheese.
  4. BAKE uncovered for 30-40 minutes until cheese is melted and beginning to brown.
