Sheet Pan Roasted Vegetables with Pork Tenderloin

  1. PREHEAT oven to 450°F.
  2. WHISK together oil, honey, apple juice, vinegar, garlic powder, salt and pepper in a large bowl.
  3. PLACE meat into oil mixture, stir to coat, and put in center of sheet pan.
  4. POUR frozen vegetables, apple and onion into the bowl with oil mixture and stir to coat. Place on sheet pan surrounding the meat in a single layer and put into oven. Roast pork and vegetables for 20-25 minutes until meat reaches 160°F.
  5. REMOVE from oven, place meat on a platter and put a foil tent over the top. Return vegetables to the oven and continue to cook for an additional 5 minutes.
  6. SLICE pork and place vegetables on the platter.
