Roasted Cauliflower Soup

Your family will love this wonderful soup that is quick and easy to prepare.



Preheat oven to 450 degrees. Place cauliflower in a shallow baking pan. Drizzle with oil. Toss to coat and arrange in a single layer. Roast 20 minutes or until desired browning occurs. Stir once halfway through. Transfer florets to a medium saucepan and add remaining ingredients. Stirring occasionally, cook on medium heat for 10-15 minutes.
