Mixed Vegetable Casserole

Keep these ingredients on hand for a quick side dish for unexpected company.


  • 1 jar English cheese spread
  • 1 (24 oz.) package frozen Pictsweet Farms Mixed Vegetables
  • 1 can water chestnuts, drained and sliced
  • salt and pepper to taste
  • 1 sleeve butter crackers, crumbled
  • 1/2 stick butter, melted


  1. PREHEAT oven to 350°F. Remove lid from cheese jar, place paper towel in bottom of microwave and heat until cheese is thin enough to pour out of jar.
  2. PREPARE frozen mixed vegetables according to package directions and drain.
  3. COMBINE cheese spread, mixed vegetables, water chestnuts, salt and pepper. Pour into a greased casserole dish.
  4. MIX crackers and butter and pour over vegetable mixture. Bake for 30 minutes until cracker topping is browned.
