Jambalaya

A must for every Cajun table. This delectable dish is even better when prepared a day ahead.

Ingredients

  • 1 (16 oz.) package frozen Pictsweet Farms Vegetables for Gumbo
  • 1 1/2 cups chicken broth
  • 2 cups tomato juice
  • 1 cup diced ham
  • 1 cup cooked, chopped shrimp
  • 1 teaspoon chili powder
  • 3/4 cup uncooked rice

Directions

In a large Dutch oven place frozen Pictsweet Farms Vegetables for Gumbo, broth and just enough water to cover vegetables. Bring to a boil. Boil for 3 minutes. Reduce heat, cover and simmer for 15 minutes. Add tomato juice, ham, shrimp, and chili powder. Simmer mixture for 10 minutes. Stir in rice and continue to cook until rice is tender. Add more water if necessary.
