Directions
- PLACE frozen pepper blend and corn in a saucepan, cover with water and bring to a boil. Cook for 3 minutes and drain.
- TRANSFER to blender or food processor and add all remaining ingredients.
- BLEND until mixture is smooth, stopping occasionally to scrape down sides.
- REFRIGERATE for at least 2 hours before serving to allow flavors to blend.
- SERVE chilled.

- 2 (28 oz.) cans petite diced tomatoes, undrained
- 1/2 teaspoon garlic, minced
- 1 tablespoon fresh cilantro, chopped
- 2 tablespoons lime juice
