Blackeye Pea Relish

This relish is so flavorful it will become a New Year's Day favorite.

Ingredients

  • 2 strips bacon, cut into pieces
  • 1 (12 oz.) package frozen Pictsweet Farms Blackeye Peas
  • 5 cups water
  • 1/4 teaspoon salt
  • 1 beef bouillon cube
  • 1 cup dried cranberries, coarsely chopped
  • 1 cup jarred roasted red peppers packed in water, drained and coarsley chopped
  • 3 green onions, sliced thin and chopped
  • 1/2 cup bacon pieces
  • 1/3 cup honey
  • 1/3 cup canola oil
  • 1/3 cup water
  • 1/2 teaspoon coarse grind black pepper
  • 1 large package tortilla scoops

Directions

  1. COOK bacon in a medium saucepan until crisp. Add frozen peas, water, salt and bouillon cube. Bring to a boil and cook for 15 minutes.
  2. REDUCE heat to medium and cook peas for an additional 20-25 minutes until tender. Drain and cool.
  3. COMBINE peas with remaining ingredients in a large bowl and blend well.
  4. REFRIGERATE for 2 hours before serving.
