Directions
- COOK bacon in a medium saucepan until crisp. Add frozen peas, water, salt and bouillon cube. Bring to a boil and cook for 15 minutes.
- REDUCE heat to medium and cook peas for an additional 20-25 minutes until tender. Drain and cool.
- COMBINE peas with remaining ingredients in a large bowl and blend well.
- REFRIGERATE for 2 hours before serving.

Ingredients
- 2 strips bacon, cut into pieces
- 1 (12 oz.) package frozen Pictsweet Farms Blackeye Peas
- 5 cups water
- 1/4 teaspoon salt
- 1 beef bouillon cube
- 1 cup dried cranberries, coarsely chopped
- 1 cup jarred roasted red peppers packed in water, drained and coarsley chopped
- 3 green onions, sliced thin and chopped
- 1/2 cup bacon pieces
- 1/3 cup honey
- 1/3 cup canola oil
- 1/3 cup water
- 1/2 teaspoon coarse grind black pepper
- 1 large package tortilla scoops
