Baked Hoppin’ John

This no-fuss combination of rice and Pictsweet Farms Blackeye Peas minds itself in the oven, giving you free time for other things.

Preheat oven to 350 degrees. In a 2-quart Dutch oven, cook bacon until crisp; remove bacon to paper towels. Add frozen seasoning blend to bacon fat and cook until onions begin to brown and liquid has evaporated, about 5 minutes. Add water, frozen blackeye peas, rice, salt and pepper. Place on stove top and bring to a boil. Boil for 3 minutes. Cover, place in the oven and bake for 45 minutes or until peas and rice are tender. Crumble bacon into mixture, stir and serve.
