Collard Greens and Red Pepper Rice

A wonderful side dish for beef, chicken or pork.



  1. PREPARE frozen greens according to package directions and drain. Coarsely chop and set aside.
  2. COOK rice according to package directions and set aside.
  3. MELT butter in a large saucepan and sauté frozen onions until translucent. Reduce heat and add peppers, broth, half and half and cheeses. Continue cooking on low heat until mixture begins to thicken and cheeses have melted.
  4. STIR in collards and rice. Blend well.
