Chicken and Kale Vinaigrette

This healthy dinner will please the whole family. Just add bread for a complete dinner.



Cook kale according to package directions and drain well. In a sauce pan, add olive oil and saute 3 pepper and onion strips until onions become translucent. Add garlic and red pepper flakes to pepper blend and cook for 1 additional minute. Add pepper mixture to kale and keep warm. Sprinkle chicken with salt and pepper. Spray skillet with cooking spray and brown both sides of chicken. Add chicken broth to skillet, reduce heat and simmer for 10-15 minutes.To serve place chicken on plate, top with kale and drizzle with vinegar to taste.
